How to make Kizhi Parotta Prepared in Banana Leaf

Kizli Parotta, also known as Killi Parotta, is a popular street food in South India where layers of Parotta are covered in a Chicken Curry and then wrapped in a Banana Leaf and steamed for 3 minutes. It is a very tasty and complete meal and because it's wrapped in a Banana Leaf, it makes a great travel meal. Although we added raw Onions for this recipe, you can maker it tastier by frying the chopped Onions first.

Total Time: 45 minutes

Ingredients

  • 500g of All Purpose Flour
  • Salt
  • 4 tbsp of Butter
  • Chopped Onions
  • Diced Tomatoes

For the Chicken Curry

  • 500g of Chicken
  • 1 tbsp of Pepper
  • Turmeric Powder
  • 1 tbsp of Chili Powder
  • Cardamom
  • Cloves
  • Piece of Cinnamon
  • Toasted Fenugreek Seeds
  • 1 tbsp of Roasted Curry Powder
  • Salt
  • Chopped Onion
  • Sliced Green Chili
  • Curry Leaves
  • Piece of Ginger
  • Piece of Goraka
  • Thick Coconut Milk

Instructions

  1. Add 500g of All Purpose Flour into a bowl.
  2. Add Salt to taste.
  3. Add 4 tbsp of Butter.
  4. Mix these ingredients together thoroughly using your hands.
  5. While adding Water, a little at a time, mix and form the dough. Important: Knead the dough for at least 7 to 8 minutes.
  6. Break the dough into smaller pieces.
  7. Roll each of the dough pieces into a ball with a smooth surface.
  8. Place each of the dough balls on a plate and pour Coconut Oil over each one.
  9. Cover the plate and then set aside for 1 hour.
  10. Place each of the dough balls on a preparation board and flatten and stretch it by hand. Important: It is okay if parts of the dough breaks as you flatten it.
  11. Grip one corner of the dough and collect it towards the center so it becomes one strip of dough.
  12. Fold the strip unto itself in a cylindrical shape.
  13. Flatten it into the shape of a Parotta.
  14. Rub some Oil in a saucepan and bring it to heat.
  15. Add each of the Parotta, one at a time, and cook both sides until it is a golden color making sure to rub some Oil in the saucepan each time.
  16. Let the Parotta cool down for a bit.
  17. Take a Banana Leaf and warm it over the stove so that it is pliable.
  18. Place a Parotta in the center of the Banana Leaf.
  19. Pour the Chicken Curry over the Parotta.
  20. Add some chopped Onions on top of the Parotta.
  21. Add some diced Tomatoes on top of the Parotta.
  22. Build multiple layers by place another Parotta and repeat adding the Chicken Curry, chopped Onions, and diced Tomatoes.
  23. Now fold the Banana Leaf from the edges unto itself and wrap it tightly.
  24. Use the Banana Leaf stem to tie the Banana Leaf wrap with the Parotta inside.
  25. Steam the Banana Leaf with the Parotta for about 3 minutes.

For the Chicken Curry

  1. Wash and clean 500g of Chicken.
  2. Add the Chicken into a pot.
  3. Add 1 tbsp of Pepper.
  4. Add some Turmeric Powder.
  5. Add 1 tbsp of Chili Powder.
  6. Add some Cardamom.
  7. Add some Cloves.
  8. Add a piece of Cinnamon.
  9. Add some toasted Fenugreek Seeds.
  10. Add 1 tbsp of Roasted Curry Powder.
  11. Add Salt to taste.
  12. Add a chopped Onion.
  13. Add a sliced Green Chili.
  14. Add some Curry Leaves.
  15. Add a chopped piece of Ginger.
  16. Add a piece of Goraka.
  17. Add thick Coconut Milk until everything is covered.
  18. Cook over medium heat.
