Kithul Flour Pudding - Quick and Healthy

When you want a healthy dessert or snack, try this cool Kithul Flour Pudding that easy and quick to make. Kithul Flour Pudding is made using Kithul Flour that is made from the pith (inner core) of the Kithul Tree. The pith, which is soft and spongy, is cleaned and dried first before it is ground into a flour. Kithul Flour is very versatile and you can use it make Pancakes and Bread.

Kithul Flour Pudding is a cooling dessert which means that when you have body heatyness, it will cool down your body. It is also a tasty dessert to eat in the summer or when it's really hot.

Ingredients

  • 100g of Kithul Flour
  • 400g of Coconut Milk
  • Salt
  • Sugar or Jaggery (optional)
  • Crushed Cardamom
  • Vanilla Extract (optional)
  • Chopped Cashews
  • Chopped Dates (optional)
  • Chopped Raisins (optional)
  • Kithul Treacle or Maple Syrup (optional)

Instructions

  1. Add 100g of Kithul Flour into a saucepan.
  2. Pour 400g of Coconut Milk into the saucepan, a little at a time, while stirring thoroughly so that there are no clumps.
  3. Add Salt to taste.
  4. Add Sugar or Jaggery accordingly to your tastes. (optional)
  5. Add some crushed Cardamom.
  6. Add some Vanilla Extract if you prefer. (optional)
  7. Put the saucepan on the stove and turn the heat on to medium.
  8. Stir frequently for about 4 to 5 minutes until it turns into a thick sticky consistency.
  9. Turn the heat down to low.
  10. Add chopped cashews.
  11. Add chopped dates or raisins. (optional)
  12. When the mixture starts separating from the saucepan, it is ready to be cooled.
  13. Coat the inside of a baking pan with butter so that the Kithul Pudding mixture does not stick.
  14. Pour the Kithul Pudding mixture into the baking pan and spread evenly.
  15. After letting it cool down on the countertop, put the Kithul Pudding mixture in the refrigerator for 2 hours so that it sets.
  16. Serve by slicing the Kithul Pudding into squares. You can top it with Kithul Pani (Kithul Treacle) or even Maple Syrup. Keep any leftovers in the refrigerator.
