How to make Sri Lankan Fish Cutlets that won't break apart

Sri Lankan Fish Cutlets are crispy, breaded, and fried fish balls that contain a spicy fish filling. It is considered a classic short eats in Sri Lankan Cuisine and is often eaten for celebrations or as an afternoon snack.

Although most Sri Lankans know how to make Fish Cutlets, the question they all have is how to prevent the Fish Cutlet from breaking apart while frying. In this recipe, I will tell you how to prevent the Fish Cutlet from breaking apart. I also make a vegetarian version of these Fish Cutlets using a Potato Filling instead. Ingredients

For the Fish Cutlets

  • 2 crushed Garlic Cloves
  • 3 thinly sliced Green Chilies
  • Some chopped Curry Leaves
  • 2 sliced Onions that have been fried
  • Some crushed Cardamom
  • Some crushed Cloves
  • Some crushed Cinnamon
  • Salt
  • Pepper
  • 3 boiled Potatoes
  • Some Turmeric Powder
  • 1 tbsp of Chili Flakes
  • 200g of Yellowfin Tuna (you can also use canned fish instead)
  • 1 Egg Yolk
  • Some Breadcrumbs

For the Vegetarian Cutlets

  • 2 crushed Garlic Cloves
  • 3 sliced Onions
  • 3 thinly sliced Green Chilies
  • Some chopped Curry Leaves
  • 3 boiled Potatoes
  • Some crushed Cardamom
  • Some crushed Cloves
  • Some crushed Cinnamon
  • Salt
  • 1 Egg Yolk
  • Some Breadcrumbs

Instructions

For the Fish Cutlet Filling

  1. Heat some Oil in a saucepan over medium heat.
  2. Add 2 crushed Garlic Cloves
  3. Add some sliced Onions.
  4. Add 3 thinly sliced Green Chilies
  5. Add some chopped Curry Leaves
  6. When it is lightly fried, add 2 sliced Onions that have already been fried thoroughly.
  7. Now turn off the stove.
  8. Add some crushed Cardamom.
  9. Add some crushed Cloves.
  10. Add some crushed Cinnamon.
  11. Add some Salt.
  12. Add some Pepper.
  13. Mash 3 boiled Potatoes.
  14. Mix some Salt and Pepper into the Mashed Potatoes.
  15. Add some Turmeric Powder into the Mashed Potatoes.
  16. Add some Chili Flakes into the Mashed Potatoes.
  17. Mix the Mashed Potatoes.
  18. Now add the Mashed Potatoes into the Cutlet filling.
  19. Turn the stove on to low heat.
  20. Stir everything together thoroughly.
  21. Cut 200g of Yellowfin Tuna into small pieces.
  22. Season the Tuna with Salt and Pepper.
  23. Boil the Tuna and then mash it slightly using your hands.
  24. Add the mashed Tuna into the Cutlet filling mixture.
  25. Stir everything together thoroughly over low heat.

For the Vegetarian Cutlet Filling

  1. Heat some Oil in a saucepan over medium heat.
  2. Add 2 crushed Garlic Cloves.
  3. Add some of the diced Onions.
  4. When it is starting to fry, add 3 thinly sliced Green Chilies.
  5. Add the remaining diced Onions.
  6. Add some chopped Curry Leaves
  7. Stir everything together thoroughly.
  8. Mash 3 boiled Potatoes.
  9. Mix some Salt and Pepper into the Mashed Potatoes.
  10. Add some crushed Cardamom.
  11. Add some crushed Cloves.
  12. Add some crushed Cinnamon.
  13. Stir everything together thoroughly.
  14. Add some Salt.
  15. Add some Pepper.
  16. Stir everything together thoroughly.
  17. Turn the stove down to low heat.
  18. Add the Mashed Potatoes.
  19. Stir everything together thoroughly.

Frying the Cutlets

  1. Scoop some of the mixture into your hand and form a ball.
  2. Dip the Cutlet into an Egg Yolk dip and then coat it with Breadcrumbs.
  3. Dip it again into the Egg Yolk and coat it again with Breadcrumbs.
  4. Deep fry the Cutlets in hot Oil.
