Easy Honey Cake with a Jam Topping, No Eggs, No Butter

This Honey Cake is sweet and moist and very easy to prepare. It is covered with a honey syrup and then topped with a Blueberry Jam. This cake can be made in only 15 minutes without adding any eggs or butter. You don't even need a hand mixer to prepare this Honey Cake.

Cook Time: 35 minutes

Ingredients

  • 2 cups of Yogurt (you can also use Curd instead)
  • 1 cup of Powdered Sugar (you can also use blended Sugar)
  • 2 tbsp of Milk Powder
  • Half a cup of Coconut Oil
  • Some Vanilla Extract
  • 2 cups of All Purpose Flour
  • 1.5 tsp of Baking Powder
  • Half a cup of Milk
  • Any type of Jam (we used Blueberry Jam)
  • 2 tbsp of Sugar
  • 2 tsp of Honey
  • Some desiccated Coconut (optional, for the decoration)

Instructions

  1. Add 2 cups of Yogurt into a bowl.
  2. Add 1 cup of Powdered Sugar.
  3. Add 2 tbsp of Milk Powder.
  4. Mix everything together using a spoon.
  5. Once the Yogurt has melted, add half a cup of Coconut Oil.
  6. Add some Vanilla Extract.
  7. Mix everything together thoroughly.
  8. Now add 2 cups of All Purpose Flour to a sieve.
  9. Add 1.5 tsp of Baking Powder to the Flour in the sieve.
  10. Sieve the Flour mixture into the bowl.
  11. Mix everything together thoroughly.
  12. While adding half a cup of Milk a little at a time, mix thoroughly.
  13. Mix until you get a smooth batter with no clumps.
  14. Rub some Coconut Oil on the inside of a baking pan.
  15. Cover the inside of the baking pan with parchment paper.
  16. Pour and spread this Cake batter evenly.
  17. Lift the baking pan up from the edges and tap it lightly on the countertop to remove any air bubbles.
  18. Preheat the oven to 170 celsius.
  19. Bake the Honey Cake for 30 to 35 minutes.
  20. Meanwhile, heat up a saucepan.
  21. Add half a cup of Water.
  22. Add 2 tbsp of Sugar.
  23. Stir frequently until all of the Sugar has melted.
  24. Take it off the stove and let it cool down.
  25. Add 2 tsp of Honey and mix thoroughly until the honey has melted.
  26. After baking the Honey Cake, let it cool down a bit.
  27. Use a toothpick or fork to make slightly deep holes on the top.
  28. Now cut off the edges.
  29. Slice off the top crust of the cake.
  30. Now pour and spread the Honey syrup on top of the Honey Cake.
  31. Add and spread the Jam on top of the Honey Cake.
  32. Cut the Honey Cake into square or rectangle pieces.
  33. Sprinkle some desiccated Coconut on each piece.
